Recipe: Positively Plantain tortillas (GF and grain-free!)Code MC201 small apple - chopped (I recommend honey crisp or pink lady)1/2 C chickpeas1/2 small avocado - chopped2 Tbsp. chopped red or sweet onion1/4 C plain coconut yogurt 1/4 tsp sea salt1/4 tsp garlic powderSqueeze of fresh lemon juiceChopped fresh cilantro to your liking1-2 Tbsp. pumpkin seedsDirections:Mix all ingredients together, minus the avocado and the tortillas. Recipe:2 cans 100% pumpkin puree (not pumpkin pie mix)2 C vegetable stock1 can lite coconut milk1 Tbsp. date syrup (or sweetener) 1 medium yellow onion, chopped3 cloves garlic, minced3 tsp curry seasoning1/2 tsp cinnamon1 tsp sea salt 1/4 tsp of cayenne pepper or hot sauce if you like spicy!Directions:Place all ingredients into your instant pot or pressure cooker. *Cook on the soup/broth setting for 8 minutes.Let the pressure release naturally.Serve and enjoy!*If you do not have a pressure cooker, cook on the stove top on medium heat. Once to a bowl, lower to simmer for 10 minutes. Make sure to watch & stir consistently.
