Ingredients

For the base:

  • 1 cup creamy sunflower seed butter
  • 1/2 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon pink salt
  • 1/2 cup plain collagen peptides
  • 1 + 1/4 cups oat flour (finely blended oats)
  • 1/2 teaspoon Ceylon cinnamon
  • Optional: 1–2 tablespoons brewer’s yeast

For the topping:

  • 3/4 cup dark chocolate baking chips (70–85% cacao)

For garnish:

  • Freeze-dried strawberries (choose organic)

Directions

Step 1: Add all ingredients into one bowl

  • In a large bowl, combine peanut butter, maple syrup, vanilla extract, salt, and cinnamon (plus brewers yeast if using). Mix until smooth.
  • Stir in the collagen peptides until fully incorporated.
  • Add oat flour gradually, mixing until a thick, moldable dough forms. The dough should feel soft but hold its shape easily when rolled.

Step 2: Roll & cool

  • Roll into evenly sized balls, gently pressing them together in your hands to create a smooth, structured shape.
  • Place in the fridge for 10 minutes to firm.

Step 3: Chocolate coating

  • In a double broiler, or microwave, melt the dark chocolate until smooth.
  • Dip or drizzle each ball with chocolate, then immediately top with freeze-dried strawberries.
  • Return to the fridge for another 10–15 minutes, or until the chocolate is set.

Storage:

Store collagen butter balls in an airtight container in the fridge for up to 7 days, or in the freezer for up to 3 months.
