Ingredients:
- 3 tbsp fenugreek
- 3/4 cup oats
- 1/4 cup flaxseed
- 10 medjool dates
- 3 tbsp coconut oil
- 1 tbsp cacao powder
- Ceylon cinnamon
- Coconut shreds to coat the energy balls
Directions:
- Start off by grinding the fenugreek in a coffee grinder. Blend into a powder.
- In a blender, add in the fenugreek powder, oats, flaxseed, cacao powder, and cinnamon. Blend together on low for 60 seconds.
- Next, add in the pitted medjool dates and coconut oil.
- Take out the mixture and roll into balls.
- Lay out the shredded coconut onto a wood cutting board, or into a bowl, and gently roll the balls into the coconut shreds until coated.Â
- Store in the fridge in an airtight container.
