¼ tsp baking soda
¼ tsp sea salt
¼ cup palm shortening
¼ cup raw local honey
1 tsp pure vanilla extract
1 tbsp maca powder (optional)
Filling:
1. Preheat your oven to 350°F and line an 8x8" baking dish with parchment paper.
2. In a mixing bowl, stir together the cassava flour, almond flour, arrowroot, baking soda, salt, palm shortening, honey, maca, and vanilla until a soft dough forms.
3. Press the dough evenly into your lined pan.
4. Pop it into the oven and bake for about 13–14 minutes, until it’s lightly golden.
5. Set aside to cool while you whip up the dreamy lemon filling.
1. In a small saucepan, whisk together your lemon juice, zest, maple sugar, coconut cream, arrowroot starch, salt, and a pinch of turmeric for that pretty golden glow. Trasnfer to stovetop to cook on medium.
2. Keep whisking gently until the mixture starts to thicken.
3. Pour the filling over your cooled crust and spread it out evenly.
4. Bake again for about 15 minutes to help it fully set.
5. Let it cool completely at room temp, then chill in the fridge for 8 hours.
