*If you are unable to find fresh elderberries, you can rehydrate dried elderberries. Simply combine 1/2 cup dried elderberries with 3/4 cup room temp or cold water. Cover and place in the fridge to soak overnight, or for 8-12 hours.
Combine Ingredients: In a medium saucepan, combine the (washed) elderberries, (washed) wild blueberries, lemon juice, Ceylon cinnamon, organic raw honey, powdered pectin, and vanilla extract. Stir well to ensure all ingredients are evenly mixed. You may choose to mix together the pectin and honey in a separate bowl first before adding into the pot for thorough mixing of the pectin powder.
Cook the Jam: Place the saucepan over medium heat. Bring the mixture to a gentle boil, stirring frequently to prevent sticking. Once it reaches a boil, reduce the heat to a simmer.
Thicken the Jam: Continue to simmer the mixture for about 10 minutes, or until it thickens to your desired consistency. You can test this by placing a small amount on a chilled plate; if it holds its shape, the jam is ready.
Cool and Store: Remove the saucepan from the heat and allow the jam to cool slightly. Transfer the jam into sterilized jars and seal tightly. Let the jars cool completely. Store in the refrigerator for up to two weeks, or process in a water bath canner for longer storage.
