Directions

  • Let sit for 5–10 minutes to bloom (it will become thick and spongy).

Step 2: Make the elderberry ginger infusion

  • In a small saucepan, add 1 ½ cups water, 2 tbsp dried elderberries, and 1 tbsp grated fresh ginger .

  • Bring to a gentle simmer (not a hard boil) and cook for 15 minutes.

  • Remove from heat, then strain through a fine mesh strainer to remove elderberries and ginger pieces.

Step 3: Combine ingredients

  • Stir in ½ cup fresh lemon juice and 3 tbsp raw honey into the warm (not boiling) infusion.

  • Whisk until the honey is fully dissolved.

Step 4: Add the gelatin

  • Gently whisk the bloomed gelatin into the warm liquid until fully melted and smooth.
    (Tip: If the liquid has cooled too much, warm it gently on low heat while whisking. Don’t boil, or it will break the gelatin.)

Step 5: Mold and set

  • Pour mixture into silicone molds (or a parchment-lined dish if you plan to cut them into squares).
  • Refrigerate for 2–3 hours or until firm.

Step 6: Store

  • Remove from molds and store in an airtight container in the fridge.

  • Shelf life: 7 days refrigerated.
