Welcome to Peace Love Hormones, AKA The Modern Woman's Apothecary! 


Cozy up with these nostalgic sourdough biscuits! Growing up, one of my favorite dinners during the chilly Chicago Fall season was my dad's homemade chilli and my mom's biscuits to pair! I wanted to recreate the biscuits but add in my gut-healthy gluten-free sourdough starter to support my digestive health and to make the biscuits themselves even fluffier. This recipe was loved big-time, and barely lasted 2 days in our home!

Directions

Step 1: Mix together the dry

Mix together the flour, baking powder, and sea salt. 

Step 2: Add in the butter

Using a grater, grate the cold butter into the dry mix. Alternatively, you can use a butter cutter to cop the butter finely within the dry mix. 

Step 3: Mix together the wet ingredients

Add the starter and milk into a separate bowl and mix together. Once thoroughly combined, add it into the dry ingredients. Knead by hand until you have a smooth ball of dough. Be careful to not overwork the dough. Cover in he fridge to cool while your oven preheats to 450 degrees F.

Step 4: Form and cook!

  1. Once the oven is ready to go, and your dough has had a moment to cool off, it is time to form it into your biscuits. This process requires a rolling pin and a biscuit cutter, or a long knife.
  2. Roll your dough out and fold it over itself 2-3 times. 
  3. Form into a rectangle. I recommend using a piece of parchment paper underneath to support with this.
  4. Cut into 8 biscuits and transfer to an oiled cast iron or lined baking sheet.
  5. Cook on the middle rack for 20-22 minutes, until the top is golden brown.  

Ways to eat these delicious and nostalgic bicuits!

  • Pair with homemade chili, or another soup or stew of choice. 

  • Eat warm, and spread some grass-fed butter on top, with a little drizzle of honey.

  • Make larger biscuits and use them for breakfast sandwiches.
